Delicious 10min Udon noodle soup recipe from @hakubaku.organic 🍜 It's our 2nd attempt so we tweaked it to our liking.

We replaced the Bok Choy with Komatsuna & Snow Peas from the garden and added steamed pork & ginger dumplings. We also only used 1 tbsp of Soy sauce.

Spinach & Ricotta Rolls. It’s a fantastic way to use your excess silver beet, spinach or rainbow chard.

Ingredients
- 1 small bunch of fresh silver beet / rainbow chard or 250 g / 8 oz frozen chopped spinach , thawed
- 250 g / 8 oz firm ricotta
- 1 ½ cups shredded mozzarella
- 1/2 cup grated parmesan
- 2 sheets of puff pastry , thawed
- 1 small onion , diced
- 1 large garlic clove , minced
- 6 sprigs of fresh mint , chopped
- 1 tsp of dried chilli flakes
- Pinch of nutmeg (fresh grated or powder)
- ½ tsp cumin powder
- ½ tsp salt
- Black pepper

- 1 egg
- Black & white sesame seeds

This recipe makes 8 rolls but you can cut into 16 smaller bite size rolls if wanted

Method
1. Thaw puff pastry (once thawed cut length ways to create 4 equal parts).
2. Pre-heat oven to 220 degrees (430F).
3. Add everything (other than the sesame seeds & egg) to a large mixing bowl and combine well.
4. Beat egg for egg wash.
5. Spray or rub oil on a baking tray then line with baking paper, also spray or rub a little oil of top it to stop rolls sticking.
6. Add cheese and spinach mix evenly to puff pastry, brush one edge with egg wash and roll.
7. Coat rolls with egg wash and sprinkle with sesame seeds.
8. Cook for 30mins or until golden brown.

Drizzle with sweet chilli sauce and devour hot.
